MICROWAVE PEANUT BRITTLE 
1 c. raw or dry roasted peanuts
1 c. sugar
1/2 c. white corn syrup (Karo)
1/8 tsp. salt
1 tsp. baking soda
1 tsp. butter
1 tsp. vanilla

In 1 1/2 quart casserole, stir together peanuts, sugar, syrup, and salt. Cook 4 minutes on high. Stir well with wooden or plastic spoon. Cook 4 more minutes on high. Add butter and vanilla; cook 1 minute on high. Remove from oven and stir in baking soda. Stir quickly until light and foamy. Pour at once onto lightly sprayed (Pam) cookie sheet. Spread thin. Let cool. Break into pieces. Store in tightly sealed containers. ENJOY!

Since microwave ovens vary in power, you may need to adjust your cooking time.
