10 MINUTE MICROWAVE PEANUT
BRITTLE
 
1 c. sugar
1/2 c. light corn syrup
1/8 tsp. salt

Combine in 2 quart glass container. Microwave at high 5 minutes. Stir in:

1 to 1 1/2 cups roasted, salted peanuts

Microwave on high 3 to 5 minutes, stirring after 3 minutes until syrup and peanuts are lightly browned. Stir in until foamy:

1 tsp. vanilla
1 tsp. baking soda

Spread to 1/4 inch thickness on large, well buttered cookie sheet. Chill; break. Store in air-tight container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
