ROCK CORNISH HENS | |
3 Cornish hens, 1 1/2 lbs. each 1 lemon 3/4 tsp. salt 1/4 tsp. BLAIR black pepper 3 tbsp. melted butter Dash of BLAIR paprika Rinse and dry hens (each hen should serve 2, if hens weight less than 1 pound, cook 1 per person). Rub inside and outside with lemon, cut in half. Cut up lemon and tuck pieces into cavity of hens. Season hens with salt and pepper. Brush with melted butter and dust lightly with paprika. Roast in 350 degree oven for 45 minutes to 1 hour. Yields: 6 servings. |
