PASTA AND FAGIOLI 
2 med. onions, sliced
4 carrots, sliced
4 stalks celery, diced
8 oz. bacon fat, diced fine
1 tsp. garlic, diced in oil
1 lb. white beans, soaked overnight
1 c. flour
2 qt. ham stock
6 oz. tomato paste
2 ham hocks, smoked
1 tsp. oregano
2 tsp. basil
1 tsp. white pepper

Saute onions, carrots, celery, bacon fat, and garlic until al dente. Add beans and flour, stir until all items are combined with flour. Add ham stock, tomato paste, ham hocks, oregano, basil, and white pepper. Bring to a boil, then reduce heat and simmer for 1 hour.

Add favorite pasta and serve with garlic toast and locatelli cheese or cheese of your choice.
