4 c. grated zucchini
1/2 c. oil
5 eggs, beat lightly
1/2 c. chopped onion and 2 cloves
Garlic, minced
1/4 c. chopped parsley
1/2 c. grated cheese (Monterey jack)
1/2 tsp. pepper
1 1/2 c. Bisquick

Mix all ingredients gently adding Bisquick last. Pour into an oiled round dish. Bake at 350 degrees for 45 minutes. Serve with Salad.
