APPLE CAKE 
Seasonal fruit
4 oz. butter
1 c. sugar
2 eggs
1 1/2 tsp. baking powder
2 tbsp. sugar
1/2 tsp. cinnamon

Cream butter and sugar. Add eggs, one at a time. Add flour and baking powder. Beat ingredients together and spread in sponge cake pan or cookie sheet with sides. Slice seasonal fruit (apples, plums or peaches) and place on top of batter, sprinkle with sugar and cinnamon mixture. Dot with butter. Bake at 350 degrees for about 45 minutes.
