CORNISH COQ AU VIN | |
1 (1 1/2 lb.) cornish hen, split lengthwise Garlic salt Salt & pepper 1 sm. onion, chopped 1 (2 oz.) can sliced mushrooms, drained 1 1/2 tbsp. butter 1/4 c. dry white wine 3 tbsp. sour cream Sprinkle hen halves with seasoning; place cut side down in a lightly greased 12x8x2-inch baking dish. cover with foil and bake at 350°F for 20 minutes. Remove foil and bake an additional 30 minutes. Sauté onion and mushrooms in butter over medium heat, 5 minutes; stir in wine. Pour wine mixture over hen halves. Bake an additional 25 minutes or until juice runs clear when thigh is pierced with a fork. Place hen halves on a serving platter reserving pan drippings. Stir sour cream into pan drippings and pour over cornish hens. This recipe is easy to increase. Fix 1 cornish hens for every 2 people. Use a 13x9x2-inch baker and increase sauce accordingly. |
