SUMMER SAUSAGE 
1 c. water
2 tbsp. tenderquick salt
1 tsp. garlic salt
1 tsp. pepper
1 tsp. chopped onion
1 tbsp. liquid smoke
2 lb. ground elk, deer, antelope or lean beef
Optional: 1/4 tsp. mustard seed

Mix well and divide into 2 portions (1 lb. ea.). Roll in foil (shiny side out) and refrigerate for 24 hours.

Poke holes in bottom of foil and place on broiler pan. Bake for 2 1/2 hours at 250 degrees. Cool and refrigerate.

Slice as needed. Freeze extra. Double wrap when freezing.
