RICE AND MUSHROOM CASSEROLE 
1 c. converted rice, uncooked
1 can chicken consomme
1 (4 oz.) can sliced mushrooms
1/2 can water (mushroom can)
1 med. onion
Salt and pepper to taste

Cut up onion and saute in butter. In ungreased 1 1/2 quart casserole, mix ingredients, combining with sauteed onion. Bake at 350 degrees for 1 hour or until liquid is absorbed.
