BAILIE'S ENCHILADAS 
50 to 60 small flour tortillas
3 lbs. hamburger
1 bag 8 to 16 oz. cheddar cheese
1 bag 8 to 16 oz. Mozzarella cheese
1 bar Monterey Jack cheese, shredded
1 bar Monterey Jack cheese with jalapeno shredded
5 pkgs. enchilada sauce mix (McCormick's or French's Best)
5 to 8 oz. cans tomato sauce

Brown hamburger, drain grease; fix sauce according to directions. Put some sauce into meat mixture to moisten put a little of all cheeses into meat for taste. Put some sauce into bottom of pans so enchiladas don't burn; put small amount of meat mixture into each shell and roll tightly. Fill pan completely and tightly. Completely cover shells with sauce so they don't burn; sprinkle shredded cheese on everything. Bake at 350 degrees for 20 to 30 minutes until melted and bubbly.
