RHUBARB CAKE 
1/2 c. butter
1 1/2 c. sugar
1/2 tsp. salt
1 egg
2 c. plus 1 tbsp. flour
3 c. cut rhubarb
1 tsp. vanilla
1 tsp. baking soda mixed with 1 c. sour milk

Cream butter and sugar. Beat in egg. Add soda and milk to mixture alternately with flour. Stir in rhubarb and vanilla. Pour in greased 9 x 13 pan at 350 degrees for 30-35 minutes or until done.

Stir 2 tablespoons vinegar in 1 cup milk to make sour milk

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese, softened
1/2 c. butter, softened
2 1/2 to 3 c. powdered sugar
1 tsp. vanilla

Cream butter and cream cheese. Gradually beat in sugar and vanilla. Spread on cooled cake.
