HUMMINGBIRD CAKE 
2 c. plain flour
3 eggs, beaten
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. ground cinnamon
1/2 c. salad oil
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple
1 c. chopped nuts
2 c. mashed bananas

Combine dry ingredients in a large bowl; add eggs and oil, stirring until all dry ingredients are moist. Do not beat mixture. Stir in vanilla, pineapple, pecans, and bananas. Bake at 350 degrees. Makes 3 layers.

TOPPING:

1 (8 oz.) pkg. cream cheese
1 box powdered sugar
1/2 c. butter
1 tsp. vanilla

Mix all ingredients. Spread topping between, on sides, and on top of cake.
