JOANNE'S ZUCCHINI 
1 lg. onion, chopped
2-3 med. garlic cloves, chopped
1/2 lb. bacon, chopped
6-8 med. zucchini, peeled & sliced into 1/2" pieces
28 oz. crushed tomatoes
Pinch of pepper

Lightly brown bacon, onion and garlic in oil. Add onion and garlic. Cook until onions are translucent. Add zucchini. Mix well. Let zucchini cook until tender. Stir occasionally. Add crushed tomatoes and pepper. Let cook approximately 30 to 45 minutes.
