BORSCHT 
3 POUNDS PORK LOIN ROAST. Salt and pepper all sides; brown on all sides in stew pot. Cover 2/3 with water and simmer about 2 1/2 hours until tender. Remove to platter.

BEETS WITH TOPS: 4 large or 7 or 8 small beets. Cut tops from beets and save; wash beets and boil 45 to 60 minutes until tender. Peel and coarsely grate or chop; set aside. Wash beet tops, including stems, and chop to about 1/2 or 3/4 inch pieces.

SEASON AS FOLLOWS: In bowl, mix until smooth 1/2 cup mayonnaise, 1/3 cup tomato catsup, 2 tablespoons sugar, 2 tablespoons vinegar (more or less to taste). Add a little of beet mixture, blending well to thin so it will blend easily when added to the pot of beets and broth. Salt to taste. Serve with the pork and boiled whole potatoes.
