FARMER JONES SPECIAL | |
1 C chopped celery 1 C chopped onion 1 tbsp butter 1 C tomato juice 1 lb. ground beef 1 tsp salt 1 can tomato paste 1 C natural brown or long grain white rice 1/3 C grated parmesan cheese Cook celery and onion in butter until golden brown. Cover. Cook until vegetables are tender. Add tomato juice, beef, salt and tomato paste. Simmer 10 minutes. In the meantime, cook rice according to package directions. While rice is still hot, place in large ovenware pie plate. Pat meat mixture over top of rice; sprinkle with cheese. Broil for 2-3 minutes. Makes 8 servings. |
