CHICKEN CACCIATORE 
1-2 lb. boneless chicken, cut in chunks
1 lg. green pepper, cut in strips
1 lg. onion, chopped
2 tomatoes, cut in chunks
1 jar Prego spaghetti sauce
4 tbsp. olive oil
1 pkg. ziti, cooked to pkg. directions

Brown chicken pieces in olive oil. Add onion and pepper, cook 10 minutes or until tender/crisp. Add sauce and simmer uncovered for 10-15 minutes. Add tomatoes and a splash of red wine (optional). Simmer until tomatoes are tender.

Serve with ziti.

Top with Parmesan cheese.
