CHICKEN CACCIATORE | |
1 lb. boneless chicken strips 1/2 c. chopped onion 1 garlic clove, minced 2 tbsp. oil 1 (28 oz.) can tomatoes 1 (8 oz.) can tomato sauce 1 tsp. salt 1/2 tsp. oregano 1/2 tsp. basil 1/8 tsp. ground red pepper 1 c. green pepper strips 1 1/2 c. Minute rice Or use 1 (16 oz.) jar spaghetti sauce and 1 1/4 cups water. Brown chicken, onion and garlic in oil. Add tomatoes, tomato sauce, seasonings and green pepper. Bring to a full boil. Stir in rice. Cover; remove from heat. Let stand 5 minutes. Stir before serving. Makes 4 servings in 20 minutes. |
