QUICK SWEET AND SOUR PORK 
2 c. cooked cubed pork
2 tbsp. peanut oil
1 can (15 1/4 oz.) pineapple chunks
1/2 c. dark corn syrup
1/4 c. vinegar
2 tbsp. catsup
2 tbsp. soy sauce
1 clove garlic, minced
2 tbsp. water
2 tbsp. cornstarch
1/2 c. sliced celery
1 tomato, cut in wedges
1/2 c. diced green pepper
1/2 c. chopped roasted peanuts

Brown pork in oil over medium heat. Add and bring to a boil pineapple chunks, syrup, vinegar, catsup, soy sauce and garlic. Reduce heat to simmer and let cook for 10 minutes. Add water to cornstarch; stir until smooth. Add to pork along with celery, tomato and green pepper. Allow to simmer about 5 minutes more, stirring constantly. Serve over steamed rice. Yield: 4 servings.
