HOT POTATO SALAD 
3 lb. potatoes, unpeeled
1 1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. celery seed
2 tbsp. chopped parsley
9 bacon slices, chopped
1 tbsp. flour
1/2 c. white vinegar
1/2 c. water
2 tbsp. sugar
2/3 c. chopped onion

Cook potatoes until tender. Drain, cool, peel and cut into cubes. Toss potatoes lightly with salt, pepper, celery salt, parsley and onion. Brown bacon until crisp. Drain from skillet all but 1 tablespoon bacon fat. Stir in flour until smooth. Gradually add vinegar and water. Stir in sugar. Bring to boiling point, stirring. Remove from heat. Add potato mixture. Toss lightly. Serve warm.
