LEMON POPPY SEED MUFFINS 
2 c. flour
1/4 c. sugar
1 to 2 tbsp. poppy seeds
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. milk
1/2 c. frozen lemonade concentrate, thawed
1/3 c. butter, melted
1 egg, slightly beaten

In large mixing bowl, combine flour, sugar, poppy seeds, baking powder and salt. In another bowl, combine milk, lemonade concentrate, butter and egg. Stir into dry ingredients just until they are moistened.

Fill lined and greased muffin cups 3/4 full. Bake in 400 degree oven for 15 to 20 minutes or until lightly brown. Immediately remove from pans. NOTE: Sugar may be sprinkled on tops of muffins before they are baked. Makes 12 muffins.
