LEMON-POPPY SEED MUFFINS 
2 c. flour
1/4 c. sugar
2 tbsp. poppy seeds
1 tbsp. baking powder
1/2 tsp. salt
1/2 c. milk
1/2 c. frozen lemonade concentrate, thawed
1/3 c. butter, melted (use stick-type)
1 egg, slightly beaten

Heat oven to 400 degrees. Use paper baking cups or grease bottoms only of 12 muffin cups.

In a medium bowl, combine all dry ingredients. Add all wet ingredients. Stir just until moistened. Fill cups 3/4 full. Bake at 400 degrees for 15-20 minutes or until light golden and toothpick comes out clean. Makes 1 dozen.
