BAKED RED FISH 
3 to 4 lbs. fish
1 c. bell pepper, chopped
2 c. onion, chopped
1/2 c. celery, chopped
1 lg. head garlic, chopped
2 (6 oz.) cans tomato paste
Salt and pepper (to taste)
1/2 c. lemon juice
1 c. oil
1 tsp. sugar
3 bay leaves
2 c. water or more
1/2 tsp. cayenne

Season fish with salt and pepper. Put in large baking pan. Pour lemon juice and 3 bay leaves in pan. Bake for 20 minutes at 350 degrees.

Saute bell pepper, celery, onions and garlic. Then add tomato paste and cook about 10 minutes. Add 2 cups water now and sugar. Simmer for 10 minutes. Pour over fish then bake for 10 minutes. Total baking time 30 minutes. Serves 4 to 6.
