LEMON BUTTER SAUCE 
2 tbsp. butter
1 c. sugar
2 eggs, beaten
1/4 c. lemon juice
2 tsp. lemon rind

Cream butter and sugar. Add eggs, lemon juice and lemon rind. Cook in top of double boiler until thick. (Serve with Bread Pudding... also, is delicious on top of Ginger Bread.)
