ORANGE - GLAZED CARROTS 
1 1/2 lb. carrots
1 tbsp. butter
1 tbsp. brown sugar
1 1/2 tsp. cornstarch
1/4 tsp. ground mace
1/2 c. orange juice
1/2 tsp. grated orange rind

Cut carrots into thin strips. Cook until crisp tender (about 13 minutes). Drain and set aside.

In another saucepan melt butter and stir in brown sugar. Mix together orange juice, orange rind, cornstarch, spices; add to sugar mixture. Add carrots and bring to a boil. Serve immediately.
