HIGHLAND SQUASH CASSEROLES 
2 c. grated raw summer squash
2 eggs, beaten
1 c. milk
1 tbsp. sugar
1 stick butter
1/4 c. chopped onion
1/4 c. chopped green pepper
Salt & pepper to taste
1 c. grated cheddar cheese
2 c. cracker crumbs

Preheat oven to 350 degrees. Blend all ingredients except cheese and crumbs. Mix cheese and crumbs together and add about half to squash mixture. Use remainder to sprinkle on top. Bake in greased casserole until mixture sets, about 45 minutes. If Ritz crackers are used instead of saltines, reduce butter to 1/2 stick.
