SUMMER SQUASH CASSEROLE 
6 med. yellow squash, sliced
1 med. onion, chopped
2 eggs
1 c. grated sharp cheese
Salt and pepper to taste
Bread or cracker crumbs

Cook squash and onion together in a small amount of water in a saucepan until tender. Drain well; mash with a potato masher. Beat eggs and add to the squash mixture. Add the cheese, salt, and pepper. Pour into a greased casserole dish and top with crumbs. Bake at 350 degrees for 35 minutes.
