SUMMER SQUASH CASSEROLE 
4 med. yellow squash
1/3 c. butter
1/2 c. chopped onions
2 hard boiled eggs, chopped
1/2 c. cubed cheddar cheese
1 c. corn chips

Boil squash until almost done. Melt butter in skillet; add onion and saute until tender. Add squash; mix well and spoon into 1-quart casserole dish. Add hard boiled eggs and cubed cheese. Sprinkle with corn chips. Place in 350 degree oven for 10-15 minutes or just until cheese is melted. Serve at once.
