SUMMER SQUASH CASSEROLE 
1 chopped med. onion
1 chopped green pepper
1 stick butter
1 pkg. corn bread stuffing mix
1 can cream of chicken soup
3 c. squash, cooked to barely tender stage

Saute onion and green pepper in butter. Remove and cool. Add 1/2 package corn bread stuffing mix. Combine soup and squash. Put a layer of stuffing in the bottom of casserole dish, add squash and top with remaining stuffing. Bake at 350 degrees for 30 minutes.
