EGGPLANT SUPREME 
1 sm. eggplant
1 sm. onion, chopped
Salt and pepper
1 beaten egg
1 can mushroom soup
2 tbsp. melted butter
1 c. Ritz crackers, crushed

Pare eggplant and cut in 1 inch cubes. Plunge into boiling water and cook until tender. Add salt and pepper to taste, also egg, butter, soup, onion, and crushed crackers. Mix well and place in a greased baking dish. Bake at 375 degrees for 30-40 minutes.
