EGGPLANT 
1 eggplant
1 can oysters and juice
1 can mushroom soup
1 c. cracker crumbs
2 eggs
1 cube butter
1 1/2 c. sharp Cheddar cheese

1 eggplant - peeled - sliced and cubed into 1 inch squares - cook in salted water 7 to 8 minutes, then drain. Combine eggplant, 1 can oysters and juice, 1 can mushroom soup, 1 cup cracker crumbs, 2 eggs, 1 cube butter, 1 1/2 cups sharp Cheddar cheese. Bake 1 hour at 350 degrees. Last few minutes add more cheese and cracker crumbs. Put back in oven for few minutes.
