CHEDDAR CHEESE POTATOES 
6 med. potatoes
2 1/2 c. Cheddar cheese, shredded
1/4 c. butter
1 c. sour cream
1/3 c. minced onion
Salt, pepper and paprika

Boil potatoes, peel and shred. Cook 2 cups cheese and butter until just melted. Remove from heat. Add sour cream and onion. Fold into potatoes and season. Pour into 8 inch buttered baking dish. Top with remaining 1/2 cup cheese. Sprinkle with paprika. Bake 30 minutes, 350 degrees.
