NO CRUST SPINACH QUICHE 
1 c. flour
1 tsp. salt
1/ tsp. baking powder
1 onion, chopped
3 c. shredded Cheddar, Swiss or Monterey Jack cheese
1 c. milk
1 stick butter, melted
2 eggs, beaten
1 pkg. frozen spinach, drained

Mix together first 5 ingredients. In another bowl combine milk, eggs, and butter. Combine with dry ingredients. Add spinach. Place mixture in quiche pan. Bake at 350 degrees for 30 to 35 minutes.

You will not be disappointed with this recipe! Amazingly easy, amazingly delicious. I used St-Albert fresh cheddar cheese, added slivers of red bell pepper to the quiche mix to give it colour, and baked it for 40 minutes in a stone deep-dish baker - leave it to rest a good 5 minutes before cutting to serve.
