FRUIT CHEESECAKE 
1 can pie filling (blueberry, cherry, strawberry)
1 (8 oz.) pkg. cream cheese, softened
1 c. sugar
1 tsp. vanilla
1 qt. Cool Whip
1 env. plain gelatin
1 c. hot water
2 graham crackers, crushed for garnish

CRUST:

1/2 lb. butter, melted
2 c. graham cracker crumbs

Prepare crust by mixing butter and cracker crumbs together and pressing in bottom of a 9 x 13 inch pan.

Mix cream cheese, sugar and vanilla. Melt gelatin in water. Add to cream cheese mix. Fold in Cool Whip. Spoon 1/2 of mixture onto graham cracker crust. Spread on pie filling. Spread on remainder of cream cheese mixture. Sprinkle graham cracker crumbs on top for garnish. Chill 8 hours.
