POTATO PANCAKES 
4 med. potatoes
2 tbsp. flour
2 tbsp. butter
3 tbsp. grated onion
2 eggs
1/4 c. light cream
1/2 c. grated sharp Cheddar cheese
Salt & pepper to taste

Peel potatoes and grate in food processor. Squeeze to remove excess moisture. Combine with remaining ingredients. Heat butter in skillet and ladle batter (about 3 inches in diameter) into pan. Brown on both sides. Keep warm in low oven.
