SNOW PUDDING (CHOCOLATE SAUCE) 
2 env. unflavored gelatin
1/2 tsp. salt
1 tsp. vanilla extract
1 (3 1/2 oz.) can flaked coconut
1 c. sugar
1 1/4 c. milk
1 tsp. coconut extract
2 c. all purpose cream, whipped

Combine gelatin, sugar and salt. Gradually stir in milk. Cook over medium heat until sugar and gelatin dissolve. Remove from heat and chill until the consistency of unbeaten egg whites. Stir in flavorings. Fold in whipped cream and coconut. Pour all into a lightly oiled 1 1/2 quart mold. Chill at least 6 hours or overnight. Unmold on to serving dish and top with chocolate sauce: flavored with pure orange.

CHOCOLATE SAUCE:

1 c. sugar
3 tbsp. flour
2 tbsp. butter
1/4 c. plus 1 tbsp. cocoa
1 c. milk
1 1/2 tsp. pure orange extract

Combine sugar, cocoa, flour and milk in a medium saucepan. Cook over medium heat until slightly thickened, stir constantly, remove from heat, stir in butter and orange flavoring. Serve over Snow Pudding.
