DAN'S CHICKEN | |
1 (3 lb.) whole chicken 1 med. onion, chopped 1 tbsp. oil 1/4 to 1/2 c. water Salt and pepper to taste Heat oil in a 4 quart pot. Salt and pepper chicken and put in pot breast side down. Add onions and water. Cover and bring to boil. Move chicken around occasionally until water begins to boil to keep it from sticking. Turn heat down to simmer for about 1 1/2 hours. the liquid is delicious on rice. |
