MCGEE'S CRACKLIN CORN BREAD | |
1 c. cornmeal 1/4 tsp. baking soda 1/2 c. cracklins 1/2 c. all-purpose flour 1 c. buttermilk 2 tsp. sugar 1 tbsp. bacon fat 1 egg 1 tsp. salt Heat a heavy 10-inch skillet with ovenproof handle in oven 5 to 10 minutes. While skillet heats, spoon cornmeal lightly into measuring cup. Sift flour, measure and resift with cornmeal, soda, salt, baking powder and sugar into mixing bowl. Add buttermilk, egg and cracklins; mix well. Remove skillet from oven; add bacon fat and coat good inside. Pour in and bake 25 to 30 minutes at 425°F. |
