JALAPENO CORN BREAD | |
1 1/2 c. corn meal 1 tsp. salt 1 c. buttermilk 2 eggs, beaten 3 to 6 jalapenos, chopped 1/2 green pepper (chopped) 1 tbsp. (heaping) flour 1/2 tps. soda 2/3 c. salad oil 1 sm. can cream corn 4 to 5 green onions 1 1/2 c. grated Cheddar Mix first 4 ingredients, add buttermilk, oil, eggs and corn. Beat and mix well. Stir in jalapeno, green pepper and chopped green onions. Grease 9 x 14 inch pan with bacon drippings; heat well. Pour in half of batter; sprinkle with 1/2 cheese and add remaining batter. Bake at 375 degrees for 35 minutes or until done. |
