APPLE BREAD 
1 1/4 c. oil
2 c. sugar
2 eggs
1 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
3 c. apples, chopped
1 c. nuts, chopped (optional)
1 c. raisins (optional)

Cream oil, sugar, eggs and vanilla. Sift together flour, baking soda and cinnamon in a large bowl. Toss apples, nuts and raisins with flour mixture. Fold in creamed mixture. (This will be stiff.) Divide evenly into 2 greased loaf pans. Bake at 350 degrees for 1 hour or until it tests done. Can use grated apple for a different texture.

I like to use 1 cup white sugar and 1 cup packed brown sugar.
