BEEF JERKY | |
3 lbs. flank steak or round steak, cut 1/2" thick 1 1/2 tbsp. salt 1/2 c. warm water 1/2 c. soy sauce 1/2 c. Worcestershire sauce 1 tsp. coarse ground pepper Garlic powder to taste Cut meat in 3/4" wide strips with grain. Dissolve salt in warm water and then add remaining ingredients. Soak meat in above mixture, about 2 hours, turning strips of meat frequently so that each piece is drenched with mixture. Place strips of meat on paper towels for a few minutes. Then place strips of meat on oven rack. Turn heat on to 120 to 130 degrees and cook at this temperature for 8 to 9 hours with oven door slightly cracked open. After cooking, turn off heat, open oven door and let air dry for 8 hours more. Package jerky in bags or jars. |
