SAUSAGE EGG CASSEROLE | |
1 lb. pork (or other) sausage meat 4 eggs, hard cooked, sliced 1/4 c. butter or sausage drippings or oil 1/4 c. flour 1/4 tsp. pepper 1/2 tsp. salt; optional 2 c. milk 2 c. or 17 oz. whole kernel corn, drained 1 c. soft bread crumbs Saute meat until browned, drain off fat and set meat aside. Slice egg and arrange half in a 2 quart casserole. Melt shortening of choice and cook, stirring constantly, until thickened. Add sausage and corn, mix well and pour over eggs and sprinkle with crumbs. Bake in oven, preheated at 350 degrees, about 30 minutes. An alternate topping idea is to put biscuit on the surface before baking. Adjust time. Serves 6. |
