BAKED STUFFED SALMON WITH SHRIMP
SAUCE
 
3 to 4 lbs. salmon, skinned and filleted
3 tbsp. butter, melted
1 c. finely minced celery
1/3 c. minced onion
3/4 c. fine bread crumbs
3 eggs
1 tsp. salt
1/4 tsp. pepper
Juice of 1/2 lemon
8 to 10 oyster shelled
6 to 8 crab legs, shelled
Medium white sauce
3/4 c. shrimp, cooked

Saute celery and onion in butter. Mix in bowl the bread crumbs, eggs, salt and pepper and lemon juice. Add sauteed vegetables and mix. Place oysters down center of one fillet. Cover with dressing. Place crab legs along side of dressing. Place 2nd fillet on top using dressing to seal edge. Cover pan with foil. Bake at 350 degrees for 1 hour. Prepare white sauce. Add shrimp and heat through stirring gently. To serve; slice salmon and top slices with shrimp sauce.
