OATMEAL CRISPIES 
1 c. shortening
1 c. packed brown sugar
1 c. sugar
2 eggs
1 tsp. vanilla extract
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
3 c. oats
1 c. chocolate chips (optional)

Cream shortening and sugars in bowl. Beat in eggs and vanilla. In a separate bowl, combine flour, salt, and baking soda. Add to shortening mixture. Stir in remaining ingredients. Drop by teaspoons onto cookie sheet.

Bake at 350°F for 10 minutes.
