SANTA FE CHICKEN 
3 lbs. chicken
3 c. Minute Rice
1 med. onion
1 green bell pepper
1 red bell pepper
1 pkg. mushrooms
1 lb. white cheese

Boil chicken until done. Let cool. Pick chicken off bone. Set aside. In mixing bowl mix chopped onion, chopped green and red peppers, chopped mushrooms, grated cheese, 3 cups of Minute Rice and then pieces of chicken. Mix all together. Add about 4 cups of chicken broth made from the boiled chicken to mixture. Be sure mixture is a little creamy you may want to add more both. Put in casserole dish. Bake at 350 degrees for about 30 minutes.
