BLACK BEANS AND RICE 
1 (15 oz.) can black beans (I prefer Goya)
1 large fresh vine tomato, diced
1 onion, chopped
1/2 cup fresh chopped cilantro
2 garlic cloves, minced
1 tbsp. chili powder (optional)
3 tbsp. olive oil
2 to 3 cups cooked white rice (depends on if you like rice with beans or beans with rice, if ya know what I mean)
2 ripe avocados, sliced for garnish

In a bowl, mix beans, tomatoes, onions, cilantro, garlic, chili powder (if desired) and olive oil. Mix thoroughly. Pour mixture into pan and heat and stir on medium heat for about 5 to 8 minutes till garlic and onions are tender but still crispy.

Place rice into bowl and pour mixture on top of rice. Mix thoroughly.

Serve rice and beans in a bowl and garnish with sliced avocados or serve with blue corn tortilla chips! Salt and pepper to taste!
