PUMPKIN COOKIES 
2 c. white sugar
2 c. butter
2 eggs
1 (16 oz.) can pumpkin (2 c.)
2 tsp. cinnamon
4 c. flour
2 tsp. baking soda
2 tsp. vanilla
2 c. nuts (optional)

Cream sugar and butter; beat in eggs and pumpkin. Beat in remaining ingredients. Drop by spoonfuls onto greased baking sheet. Bake at 375 degrees for about 12 minutes or until done.

CREAM CHEESE FROSTING:

1 stick butter
4 oz. cream cheese
Powdered sugar, approximately 4 c.
