PUMPKIN REFRIGERATOR COOKIES | |
1 1/2 cups shortening 2 cups sugar 1 egg, beaten 4 1/2 to 5 cups sifted flour -OR- enough to make dough stiff 1/4 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. cloves 1 cup thick, unsweetened pumpkin 1 cup chopped nuts Cream together shortening and sugar; add egg. Sift together dry ingredients; fold gradually into creamed mixture alternately with pumpkin. Add nuts. Mix into stiff dough; form into two rolls. Wrap in waxed paper; store in refrigerator. Slice thin and bake on greased cookie sheet in 375°F oven for 15 to 20 minutes. Submitted by: Melanie Kelly |
