BLUEBERRY MUFFINS | |
2 c. self-rising flour 1/3 c. sugar 1 well beaten egg 1/2 c. milk 1/3 c. oil 1 c. sweetened blueberries Mix flour and sugar in bowl and make well in center. Combine egg, milk and oil. Add all at once to dry ingredients. Stir quickly until dry ingredients are moistened only. Fold in blueberries. Grease muffin tins and fill 2/3 full. Bake at 400 degrees for 25 minutes. Yield: 1 dozen. |
