MARINATED MUSHROOMS 
1/2 c. cooking oil
1/2 c. vinegar
1/2 c. sliced or chopped white onions
1/2 c. brown sugar
1/4 c. chopped bell pepper
1 can Rotel tomatoes (liquify in blender)

Saute onion and pepper in a small amount of oil. Add vinegar and sugar; stir until sugar dissolves. Remove from heat and add remainder of oil and tomatoes. Season to taste with salt, pepper and a few drops of soy or Worcestershire sauce.

Cook mushrooms about 5 minutes in microwave in a small amount of water, or simmer carefully on stove until just tender. This recipe will marinate about 2 1/2 pounds of mushrooms and they will keep nicely in the refrigerator for about 2 weeks. For best flavor, marinate overnight before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
