KATHI'S VEGETABLE QUICHE 
1 frozen pie shell
2 c. asst. vegetables, lightly steamed
1 tbsp. minced onion
1/3 lb. shredded Cheddar or Monterey Jack cheese
1/2 c. mayonnaise
1/2 c. milk
1 tbsp. cornstarch
2 eggs

Preheat oven to 450 degrees. Cover frozen pie shell with foil and bake empty shell for 8 minutes. Lower to 350 degrees and bake 4 minutes longer. Remove from oven. Place vegetables into shell. Cover with cheese. Mix last 4 ingredients together and pour over all. Bake at 350 degrees for 35-40 minutes.
